Between catching flights, dozing off at the airport and shopping at the duty free, there is something else too that you can do. We are talking about kick starting your day with a healthy and hearty breakfast! For breakfast we usually think that milk and cereal are enough to keep us going . We thought of replacing this usual breakfast with something unusual that Chef Ankit Mangla taught us at the Plaza Premium Lounge, New Delhi Airport.
Mangla started the tasting session with the very light and fluffy apple and cinnamon pancakes. Instead of using the usual maple syrup and nutella, he took a few minutes to prepare apple and cinnamon topping. Next on the menu was Banoffee French Toast. As the same suggests, the french toast was topped with banana and toffee sauce. The french toast was perfectly cooked until it was golden.

As Chef Mangla got the ingredients ready for vegetarian Rosti with Pico de gallo salsa, Sriracha Chicken Sausages and Shakshouka, we sipped to the fresh kiwi mojito which was served as soon as we entered the lounge.
The rosti, which is made from mashed potatoes was prepared in 15 minutes and was crisp and wholesome. Mangla used a lot of paprika and oregano to make the Sriracha Chicken Sausages tangy. He also added vegetables such as bell peppers and spring onions that turned the simple sausages interesting. The last dish on the menu was Shakshouka which were spiced poached eggs. The dish was prepared by adding a lot of herbs and vegetables. Trying these dishes left us satiated and geared us up for the day ahead.
